I was shocked The differences between families and traditions even around food are fascinating. For them, it seems ham isn't the done thing in Bristol apparently. You basically chop up half a loaf of gingerbread (we usually use ontbijtkoek, a Dutch breakfast loaf, because it's relatively easy to get), soak it in roughly a pint of "Schwarzbier" for an hour or more. At the same time, you boil up some diced carrots, parsnips (optional), celeriac and a chopped onion until they're almost tender. Then you add the gingerbread mixture, cook until everything is nice and thickened, then you throw in some frankfurters or smoked sausages, and serve the whole thing with boiled potatoes and sauerkraut.
